Here's my discovery - MORNING GLORY MUFFINS... They're seriously wonderful for breakfast. I made some changes with the last batch, and while I haven't had one yet, I know it'll be fabulous (all I changed with this batch was the addition of the apples I'd forgotten last time, along with some cranberries.)
MORNING GLORY MUFFINS (my changes in BOLD)
Ingredients:
2 cups all-purpose flour
1 1/4 cups white sugar (1 cup)
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/4 teaspoon salt
2 cups shredded carrots (2-1/2 cups)
1/2 cup raisins (1/2 cup mix of dried cranberries and raisins)
1/2 cup chopped walnuts (pecans instead of walnuts)
1/2 cup unsweetened flaked coconut (3/4 cup)
1 apple - peeled, cored and shredded (2 granny smiths, finely chopped)
3 eggs
1 cup vegetable oil
2 teaspoons vanilla extract
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
2. In a large bowl, mix together flour, sugar, baking soda, cinnamon, and salt. Stir in the carrot, raisins, nuts, coconut, and apple.
3. In a separate bowl, beat together eggs, oil, and vanilla. Stir egg mixture into the carrot/flour mixture, just until moistened. Scoop batter into prepared muffin cups.
4. Bake in preheated oven for 20(30) minutes, until a toothpick inserted into center of a muffin comes out clean.
These muffins cook up soooo beautifully, too. GREAT STUFF!!!!! Check out just how FULL of good stuff the batter is!!!

Look at all those carrots, apples, raisins, coconut, pecans, and cranberries...

Mixing the flour into the fruits/veggies/nuts...

Adding in the wet ingredients...

They're even pretty before they're cooked!

NOT a good photo, but these guys are THE BOMB!
