"Doughnut Holes"

Okay, so I tried a recipe from a book called 'Better Than Peanut Butter And Jelly' that I checked out from the library.

Here's the recipe:

1 cup lowfat dry milk powder
1/2 cup natural peanut butter
1/4 cup honey
1/2 cup crispy rice cereal

Mix all ingredients together. Roll into balls. Refrigerate for 1 hour.

HERE'S WHAT I DID: When at the store, I bought multigrain Rice Krispies instead of plain. Thing is, they're bigger than regular crispy rice cereal. Not sure if I would've preferred the smaller bits... These gave the balls a nice crunch.

Anyway, I doubled the recipe using organic peanut butter and the larger Rice Krispies. THEN, to make it super great, I dropped the balls (the size of doughnut holes) into a plastic bag of powdered sugar. Now, really, aside from the honey, this is the only true "sweet" that the recipe has...

The cereal packs a bit of a crunch, and the milk powder sort of dries the mixture up enough that once it's set, it's really quite "biteworthy."

Given the protein of the milk powder and organic peanut butter and the nutritional benefits of the honey and the cereal (which is usually enriched), the kids will LOVE this with a glass of milk or OJ as a breakfast treat! MUCH BETTER than traditional doughnut holes!

The test? Well, both of my LOVED them... and I had a few myself, haha!

I may play with the recipe in the future with healthier cereal options - maybe cheerios that have been buzzed in the processor for a second (to break into pieces) or maybe even oats...

Either way, they're round and covered in a good dusting of powdered sugar. To the kids, they're doughnut holes. To me, they're much more!
